In old version I was able to do so by turning on ‘Clear cookies and site data when you close all windows’ and adding the exceptions on ‘Sites that can always use cookies’
Now how can I do it with the new settings?

Or
go in privacy and security
click on clearing browsing data
Thanks for your answer, but the thing is in previous version I was able to clear ALL cookie except for sites I’m logged in, the solutions you are suggesting is either to clear cookies of ALL sites without exception for sites I’m logged in or to let ALL sites collect cookies.
To make it clear, previously, I was clearing all cookies by turning on ‘Clear cookies and site data when you close all windows’ except for sites I’m logged in like facebook, twitter, reddit, etc by adding them on ‘Sites that can always use cookies’ list.
If there is someway to retrieve this feature it will be amazing.
No idea Bro…maybe search it on google or youtube
Yes. Go to Site and Shields Settings > Additional content settings > On-device site data > scroll down to > Customized behaviors > Add (your site).

@ArunROG87Razer thanks for posting above. It appears I’m somewhat confused about Forgetful Browsing and need to investigate this more.
@sfhrbgn I edited my earlier post to reflect my apparent confusion. The link @ArunROG87Razer posted is the better explanation of the current situation.
@sfhrbgn — as @ArunROG87Razer states, the method I laid out in that thread will achieve what you’re looking for. Remember that settings configured in the Shields panel are site specific.
