Is there another option for me to setup to accept payments? I see this post here Uphold is not available in Tennessee. How else can I receive my funds? but it is closed with no activity.
Is it not possible to just point it at my eth address and call it a day?

Uphold team is aware of this issue. 
The elephant in the room here is that Uphold does all the work related to financial compliance. This division of labor means that we can’t just hook up an ERC-20-compatible address and call it a day, because then we’d be on the hook for all that compliance work.
I understand the desire to be compliant with existing government regulations. The inability to just hook an address to the system and do transactions… We might as well use paypal and browser forked from chrome with noscript and ublock origin enabled.
The novelty of crypto transactions isn’t going to carry forward for a large portion of the internet.
Sorry this is all really snarky, but the disappointment level here is pretty high. This is a serious issue.
