I just found a hint here:
I changed the Minimum Width setting in dev options from 856 to 1000 and now I am seeing desktop versions of sites again. It also made everything in the entire UI smaller, but I can deal with that. I’m still wondering why this happened… I have never messed with Minimum Width before. Insight would be appreciated.
