How can this issue be reproduced?
- email links won’t open in macOS mail. They all make you open google in Brave.

Can I get some clarification to the situation? What do you mean by email links? Are you referring to a URL that directs you to a page? or the email address itself?
Can you give more info when you say open google in Brave.

Whenever I do anything on my Mac that requires sending an email, like sharing a photo, a screen shot or following an email link on a web page the brave browser is opened at my gmail page instead of using the standard Mac mail program. When I tried to go into settings to pick my default mail program only the brave option is available. Deleting the Brave browser from my computer was the only way to get it to stop.

Can you try setting the default mail reader within the Mail app.
Open Mail > choose preferences from the Mail menu > click general > choose your email app from the ”Default email reader” pop-up menu
