I want to be allowed to give certain cookies the permission to be run on any given site. so in return letting that one cookie possibly track my data, Not all of them.

i did not test this yet
but try try it go to brave://settings/cookies and scroll down and add the site you like
not sure if that mean the cookies of that site even if it used as third party site would work or not

As @justsomeone1 said, you can go to brave://settings/cookies and add sites to the allow all cookies list

Also if you click on the lock icon and then go to cookies, you can block individual cookies.
