1.I have tried on iPhone and iPad to save sights such as MEWE to favorites but there is no option I can locate to do this.

Tap on three-dot menu -> Add Bookmark.
On ‘add bookmark’ screen, tap on Bookmarks location and select Favorites, now the bookmark should save to favorites.

If you want to reorder it afterwards just tap on url bar where all favorites are shown and you can drag and drop to your location of choice.
