I work in both French and English and when I write in fields, I only have English (spell check) available and I can’t add another language.

You can go ahead and add multiple languages to your browser, then the option to enable spell check for them will be available.
One question: are you on Windows?
Mac user here. Although I also have two languages, I don’t have the Spell check section you have (I just have the Spell check line with the on and off button).
