I set the browser to use the dark theme because I assumed it would be easier on the eyes. But, it’s not easier on the eyes because of the obnoxious hot pink background on new tabs assaulting my eyes. How do I get rid of that and on the settings menu bar as well.

You need To adjust the hot pink colors in Brave’s Dark Theme:
Go to Settings > Appearance.
Customize the theme to change the accent color or try a different theme.
