Delete cookies - but not all

I would like to have Brave (on Mac with Sonoma) to delete all cookies when closing, but for some sites I want to hold the cookies, so that I don’t need to login when I arrive at them. So I must have a list with exceptions. I can’t find out hoe to do this. (With Firefox or Edge it’s very easy.)
There are many pages on the web which pretend to explain this, but the menu points they mention don’t exist . Many of them speak about something calles ”shields“. I can’t find this.

So the question. is: can Brave do this, or is it impossible? (The help pages of Brave don’t help – as usual…)

Settings - Shields - Forget me when I close this site (clears cookies and other site data when you close a site): turn it on if you want them to be deleted.

If you want exceptions go to the website - click on the Brave Shields icon (lion head) - Advanced controls - Forget me when I close this site: turn it off and reload the page. Now your logins will be saved.
